Roasted Lamb Leg1 5-6# lamb leg, bone in or out. Tip: Marinate lamb leg and let come to room temperature before you roast Make the following herb paste to marinate lamb with; 1 T thyme1 T rosemary 2 T oregano 2 T Lemon zest 1 t fennel 1 T crushed garlic 1-1/2 T kosher salt 2 t fresh ground black pepper 1 t dried mustard Pack onto lamb and let rest for a couple hours as it comes to room temp. 5-7 potatoes, sliced into 3/4" circles, rubbed in salt and lemon Preheat oven to 500. Put potatoes in bottom of roasting pan. Place lamb on top of potatoes in a roasting pan and put into the very hot oven. Immediately lower oven to 300. Let roast for 2-3 hours depending on size of lamb.Thermometer should read 125 for a med-rare roast and lamb leg should be eaten med-rare for optimal tenderness and texture. | |||||||
