Eat your Veggies!
Ingredients:
1/2 pound of turnips
1/2 pound of carrots
1 T of butter
Handful of peeled shallots
1 T of olive oil
S & P
1 cup of chicken stock
1/4 lemon squeezed
Fresh chopped thyme
What to do:
Scrub and cut turnips and carrots into big chunks. Heat up butter and oil and add shallots, turnips and carrots. Let saute for about 10 minutes stirring now and then until starting to caramelize. Add chicken stock, salt & pepper. Cover with a lid and turn down low. Let cook for another 10 minutes. Squeeze lemon and crumble fresh Thyme. Hit with a little S & P and serve.
