No longer a Secret Spice!
Make a dry rub out of these ingredients. Store indefinitely or until you run out.
1 T cumin
1 T cumin seed
1 T fennel seed
2 t black pepper
1 T ground coriander
2 T chili powder
3 T of paprika
1 T of curry powder
1 T t oregano
1 t thyme
1 t crushed red pepper or cayenne
1/4 cup of sea salt
3 T of brown sugar or rapadura
Season burger liberally while cooking with secret spice rub. Pull off at Med-rare. Elk and buffalo hate to be overcooked. Our buffalo and elk come from High-Ranch in Hotchkiss. They can be found at Aspen Saturday Farmer’s Market and Wednesday Carbondale Market. We serve our burgers with organic Jack cheese, lettuce, tomato and onion on a fresh baked sesame wheat bun from The Flying Fork Bakery in Paonia.
