Curried Kale and Chickpeas

Curry Mix

Saute in olive oil,

1 onion

1 clove garlic, crushed

1″ ginger, grated

1 tsp mustard seed

1 tsp cumin seed

1 tsp garam masala

1 tsp curry powder

Add 2 bunches chopped kale

2 chunked potatoes

1 can of drained chickpeas

1/2 lemon, squeezed

1 quart of chicken or veggie stock

Cover and simmer for 45 minutes. Add S & P and serve over Basmati rice with a dollop of plain yogurt. Mhhhmmmm.
